Holiday Pomegranate Salad - Flavia's Healthy Kitchen

Ingredients:


3 Cups fresh red leaf lettuce

1/4 Cup fresh mint leaves, chopped

1/4 Cup fresh dill sprigs, chopped

1/2 Cup chickpeas, previously cooked or canned

1/2 Cup pomegranate seeds

1/4 Cup red onion, chopped

6 cherry tomatoes

1/4 Cup sweet red pepper, chopped

1/4 Cup sweet orange or yellow pepper, chopped

6 oz. goat cheese, crumbled (optional)

Crushed red chili pepper, to taste

Sea salt, to taste

Mint dill dressing from @flaviashealthykitchen 🙏🏻💓 or

Tzatziki sauce Athena from @flaviashealthykitchen 🙏🏻💓


Place all the ingredients in a salad bowl.

Add the mint dill dressing from @flaviashealthykitchen or if you prefer a creamier dressing you can add Tzatziki sauce Athena from @flaviashealthykitchen.

Here you can be a little creative and add chicken or any other vegetable or animal protein if you desire.
