Spring dressing

  • 1/2 Cup extra virgin olive oil.

  • 2 Tbs apple cider vinegar.

  • 1 Tbsp orange juice, freshly squeezed.

  • 2 garlic cloves, finely chopped.

  • 1/2 Cup fresh cilantro, finely chopped.

  • 1/2 inch fresh ginger root, sliced.

  • 2 Tbs maple syrup.

  • 1 tsp Dijon mustard.

  • 1/4 tsp ground cumin.

  • 1/8 tsp sea salt (or to taste.)

  • Cayenne pepper to taste.

Place all the ingredients in a food processor or a blender and mix for few minutes till you reach the desired dressing consistency.
