Ideal for our Black Lentils and Kale Salad
1/2 Cup extra virgin olive oil.
2 Tbs apple cider vinegar.
1 Tbsp orange juice, freshly squeezed.
2 garlic cloves, finely chopped.
1/2 Cup fresh cilantro, finely chopped.
1/2 inch fresh ginger root, sliced.
2 Tbs maple syrup.
1 tsp Dijon mustard.
1/4 tsp ground cumin.
1/8 tsp sea salt (or to taste.)
Cayenne pepper to taste.
Place all the ingredients in a food processor or a blender and mix for few minutes till you reach the desired dressing consistency.
