  • 1/2 Cup olive oil.

  • 3 Tbsp lime juice.

  • 1/4 Cup Pinto beans, previously cooked or canned and drained.

  • 1 or 2 Garlic cloves, minced.

  • 1 scallion, thinly sliced.

  • 1 tsp Dijon mustard.

  • 1 Tbsp Maple syrup.

  • 1 tsp lime peel, finely grated.

  • 1/2 Cup chopped fresh parsley or 2 Tbsp dried parsley.

  • 2 Tbsp sunflower seeds (optional).

  • 1/4 tsp white pepper or to taste.

  • 1/8 tsp paprika.

  • 1/8 tsp turmeric.

  • Sea salt to taste.

Preparation: Place all the ingredients in a food processor or a blender and mix for few minutes until you reach the desired dressing consistency.

Serves 4 to 6 people.
