8 plum tomatoes, cut and seeded
2 Tbsp extra virgin olive oil
1 white or Vidalia onion, finely chopped
2 scallion stalks
3 garlic cloves, crushed
1 inch fresh turmeric root, crushed
1 Tbsp tomato paste
6 fresh basil leaves, chopped
1 Tbsp fresh oregano minced, 1 tsp dried
Crushed red chili Pepper to taste
1/2 tsp sea salt
1 Tbsp extra virgin olive oil (optional)
Cut tomatoes in half, take the seeds out and strain the juice. Place the seeded tomatoes and the juice in a blender and blend until smooth. It should yield about 20 oz (2 ½ cups) of tomato juice.
In a saucepan, sauté the onions, scallions for about 5 minutes until the onions are translucent. Add the garlic and the turmeric and continue sautéing. Add the tomato paste and then the fresh tomato sauce. Bring to a boil, then lower the heat to medium low heat. Add the rest of the spices and the additional olive oil, if desired. Cook for about 25 minutes.
Serve on top of your favorite pasta or in any of your favorite recipes.
